This is a deliciously satisfying sauté, complete with protein, vitamin rich vegetables, and flavor. Enjoy it as a side, main-dish, or as a topping on quinoa or brown rice.  Anyway you like it, your body will thank you for it!   

  • 4 garlic cloves, minced
  • 8 sun-dried tomatoes, chopped and placed in ¼ c hot water to rehydrate
  • 1 T pepper
  • 1 T coriander
  • 1 dash cayenne pepper
  • 1 t turmeric
  • 2 t garlic powder
  • 1 dash of lime juice
  • 2 leeks, chopped
  • 4 carrots, chopped
  • 3 bunches chard, chopped
  • 3 organic mini sweet bell peppers, chopped
  • 8 oz organic white button mushrooms, sliced
  • 16 oz cooked black beans

Sauté garlic in cast iron skillet. Add leeks, followed by carrots. Sauté until tender with sun-dried tomatoes, pepper, coriander, cayenne, turmeric,  garlic powder, and lime juice. Add chard, followed by peppers and mushrooms.  Mix in black beans.  Serve warm.  Enjoy!
