Green B.E.A.N. Delivery came today and included some beautiful produce, including Lacianto kale, Roma tomatoes, carrots, leeks, garlic, mushrooms, and peppers, and Earthbound farm organic purees.  These deliciously simple purees from Earthbound Farms make any recipe pop, so I fired up the stove and added them to the cast iron skillet, creating a wonderfully healthy sauté that was filled with flavor and nutrients.  Enjoy!  

  • 1 swish extra virgin olive oil
  • 4 garlic cloves, diced (Earthbound farm organic crushed roasted garlic puree)
  • 2 T organic chili pepper puree (Earthbound farm organic crushed chili pepper puree)
  • 2 T organic Italian herbs blend puree (Earthbound farm organic crushed herbs puree)
  • 2 T Italian seasoning
  • 1 T garlic powder
  • 1 dash cayenne pepper and/or red pepper flakes
  • 1 T pepper
  • 2 leeks, chopped
  • 5 organic Roma tomatoes, chopped
  • 5 carrots, chopped
  • 1 eggplant, cubed
  • 1 organic red pepper, chopped
  • 8 oz mushrooms, chopped
  • 2 bunches of greens, I used Lacianto kale, chopped

Sauté garlic and leeks in a swish of olive oil and garlic, chili pepper puree, Italian herbs puree, 2 T Italian seasoning, 1 T garlic powder, cayenne, and 1 T pepper.  Add in tomatoes, eggplant, and carrots, and sauté until tender, followed by red pepper, mushrooms, and kale. Sauté until tender.  Enjoy!
