I get it. When you look at the picture of my sausage gravy, the meat eater inside says…are you kidding? That doesn’t look like Bob Evans or Jimmy Dean!  But the reason for the discrepancy is that pork sausage has SO MUCH animal fat in it that the gravy is almost white. (because fat is white-ish…) Surely, you’ve heard the birds and the bees on what animal parts are in the meat-blend we call sausage, right? If not, google “What is sausage made of?” on your own. I prefer to keep my appetite. 

But if you are willing to get over your color commitment to pork sausage, you might find this recipe scratches the itch we all have for the warm comfort of biscuits and gravy.

I created this gravy using two different styles of grain meat because I wanted a mixture of textures.  A box of WestSoy seitan and a package of Quorn crumbles are my favorites. For the sausage flavoring, I added 1 tbsp each of ground fennel seed, ground mustard and garlic powder, and 1/2 tsp of cloves and paprika. And then black pepper to taste. For the cream sauce,  I used a full carton of Imagine Portobello Mushroom Soup. Thicken with 2 tbsp of flour whisked into coconut milk.(I used tapioca flour, but all purpose flour is just fine.)  Turn off the heat once you’ve achieved desired thickness.  Add a little sea salt if necessary. 

I used Light Bisquick to make the biscuits and prepared according to package directions, using rice milk instead of dairy. There are no animal products in the ingredients.

I’ve tried vegan biscuits and gravy with the LightLife Gimme Lean brand grain sausage. It might rhyme with Jimmy Dean, but it’s not a ‘starter’ flavor if you are just wading into vegan products. It’s easier to prepare, as you can just thicken with a bit of coconut milk and pepper. Truth be told, my 11 year old Kyle LOVES the stuff, but the leftovers go to the dogs. The dogs aren’t disciplined vegan, but they are always grateful for homecooking—the only exception being my first try at vegan meatloaf last year…they collectively donated that disaster to the deer, who also rejected it. It turned to stone and is still in the backyard of our West Virginia house. Maybe a bear will wander through….
